Trident Akutan Bairdi Crab

Sarah wandered over to Trident at the end of the week and found some plant workers willing to show her around their crab processing wing. They had just gotten in a load of Bairdi Crab (also known as Tanner Crab--they can only be found in the Bering Sea, and are not as elite a species as King Crab, but less expensive and sweeter tasting), and she got to see the whole process from butchering to boiling.
